Quick and easy chicken
and sweet potato pasta
2 cups wholemeal self-raising flour
½ cup sugar
½ cup sultanas
½ cup chopped dried apricots
1 teaspoon cinnamon
1 egg, beaten
1 cup milk
2 tablespoons (40ml) extra virgin olive oil
Heat the oven to 180oC.
Mix all dry ingredients in a large bowl.
Add the egg, milk and olive oil to dry ingredients and mix together.
Put into prepared muffin tin.
Bake for about 15 minutes (until they smell cooked but before they are burned on the bottom).

2 cups self-raising flour
¾ cup sugar
2 tablespoons cocoa
½ cup milk, white or dark chocolate bits
½ cup raspberries (fresh or frozen)
1 teaspoon vanilla essence
1 egg, beaten
1 cup milk
2 tablespoons (40ml) extra virgin olive oil
Heat the oven to 180oC.
Mix all dry ingredients in a large bowl.
Add the egg, milk and olive oil to dry ingredients and mix together.

4 tablespoons cocoa
1 cup milk
150ml extra virgin olive oil
3 eggs
1 tablespoon vanilla essence
Heat the oven to 180oC.
Mix all the dry ingredients in a large bowl.
Add eggs, milk, vanilla and olive oil.
Beat hard until well combined.
Bake for 45-50 minutes or until cooked.

1 cup sultanas
1 cup currents
1 cup mixed fruit
1 cup brown sugar
3 teaspoons mixed spice
1 teaspoon bicarb soda
1 cup water
125ml (½ cup) extra virgin olive oil
2 eggs, beaten
1 cup plain flour
1 cup self-raising flour
Heat the oven to 180oC.
Boil together the fruit, sugar, mixed spice, bicarb soda and water.
Allow to cool.
Add olive oil and eggs and mix well.
Add flour and mix well.
Bake in a 20cm spring form pan for 60 minutes or until cooked. Allow to cool slightly before removing from pan.
Quick and easy olive oil pasta
Cook your favourite pasta – fettuccini is great for this recipe.
Toss through a generous drizzle of extra virgin olive oil.
Sprinkle with parmesan cheese and serve.
Quick and easy olive oil pasta with roast vegies
Roughly chop 1 zucchini and 1 eggplant. Season with salt and pepper if desired. Add 1 head of garlic (cloves separated). Roast in a baking tray with a drizzle of extra virgin olive oil at 180 oC for 20 minutes or until soft.
Cook your favourite pasta.
Add the roasted vegies and a generous drizzle of extra virgin olive oil and toss through to combine.
Sprinkle with parmesan cheese and serve.
Quick and easy chicken and sweet potato pasta
Roughly chop 1 sweet potato. Add to baking tray along with 1 chicken breast, 1 head of garlic (cloves separated) and a generous drizzle of extra virgin olive oil. Roast in the oven at 180 oC for 20 minutes or until chicken is cooked. Shred the chicken. Peel the garlic and mash with a fork.
Cook your favourite pasta.
Add the roasted vegies, chicken and a generous drizzle of extra virgin olive oil and toss through to combine.
Sprinkle with parmesan cheese if desired and serve.
